A team of pharmacists at the University of Santiago de Compostela (USC) has found that vitamin C levels of many juices and soft drinks are much higher than indicated by the manufacturers on the labels. The discovery was possible thanks to a new technique developed by researchers to determine the vitamin C content in these drinks.

Ascorbic acid or vitamin C is a natural antioxidant fruit and vegetables, but the European Commission allows use as an additive in juices, jams, dairy and other foods. The implication of this substance in the immune response and other biochemical processes, such as collagen formation or absorption of iron, is well known. However, high levels of ascorbic acid may cause diarrhea and gastrointestinal upset, as scientists try to identify with increasing accuracy in vitamin C content of foods.
